This paper evaluates a program for assessing and/or training choice-making skills as a means of providing opportunities for adults with profound mental retardation to express food and drink preferences. In Experiment 1, the assessment/training procedure involving repeated, paired-item presentations, resulted in active choice-making and the identification of distinct preferences for all five participants. Results also indicated that the opinion of the participants' caregivers was not very predictive of which food and drink items the participants would choose when given an opportunity. A survey of 41 service providers supported the importance of persons with severe handicaps having meal-related choices, and indicated that this population has a relative lack of such choices. In Experiment 2, the practicality of the assessment/training procedure was supported by demonstrating that: (1) routine caregivers of 13 clients could apply the procedure to provide choice opportunities and identify preferences; and (2) results of the procedure were predictive of participant choices when provided with a less structured and more normal opportunity to express preferences during ongoing mealtimes.
